Brunch brunch brunch is by far my favorite thing about Sunday! Heck it's probably my favorite part of the week and this one definitely did not disappoint! I got 2 eggs, on a bed of different greens🍃, veggies and sweet potatoes with a side of ham! And since we can eat our own body weight also a side of granola and peep that pancake in the background 👀 ahh so good! Hope everybody is having a wonderful day so far🤗

NUMBERS MEAN NOTHING👇🏻

Firstly I want to start by saying that there is nothing wrong with any of the bodies in the above photo. They are just pictures of me at different stages of my life. ⠀⠀⠀⠀⠀⠀⠀⠀
The left is half way into training for my first Bikini competition, counting every macro, rarely treating myself and living in the gym. ⠀⠀⠀⠀⠀⠀⠀⠀
The middle is post comp, over indulging, training sporadically and feeling a little lost. ⠀⠀⠀⠀⠀⠀⠀⠀
The right is two weeks ago on holiday for my boyfriends 21st birthday. There was no 'summer shred' or 'bikini bod' prep. (Not that there's anything wrong with that). I train hard because I enjoy it and because I want to. I am mindful of what I eat but eat intuitively and still treat myself regularly. ⠀⠀⠀⠀⠀⠀⠀⠀
I am currently the heaviest I've ever been - granted, not by much, but there was a stage in my life where the smallest increase in weight would have scared me. The number on the scales in the morning defined my mood for the rest of the day. I feel like nowadays all we care about is numbers. The number of friends we have, calories, followers, money in the bank and that weight on the 'sad step' as I like to call it hahaha. ⠀⠀⠀⠀⠀⠀⠀⠀
What we really should be doing is enjoying our lives and counting memories. And that's exactly what I plan to do! I've been through all extremes of under eating, over eating, restricting, counting every calorie, binging. You name it. I've tried it. ⠀⠀⠀⠀⠀⠀⠀⠀
But I can now say that I'm at a stage in my life where I am happy with my appearance but most importantly my attitude towards food 💪🏻

Mexican Lasagna by @wearesovegan 💛

Recipe
Serves 6 people:
——Ingredients——
1 onion diced
1 red pepper diced
2 garlic cloves finely chopped
chili seasoning (packet)
2 tins black beans (rinsed and drained)
260 g tinned sweetcorn
2 tins chopped tomatoes
6 tortillas
jalapeño peppers sliced
100 g vegan cheese grated
large handful of tortilla chips crushed
handful of cilantro
oil for frying
———Method———
1. Preheat oven to 200°C.
2. Place a little oil in a pan on a medium heat and fry the onions for around for 5 minutes or until soft.
3. Add the garlic, pepper and chili seasoning, and fry for a further two minutes.
4. Then transfer the beans, tinned tomatoes and tinned sweetcorn to the pan, and heat through for around 5 minutes, stirring occasionally.
5. Spoon 3-4 large spoonfuls of the chilli mix into your lasagna dish. Spread out the mixture so it covers the bottom of the dish, then cover with two tortillas. Repeat this step for another two layers of tortillas, finishing with a layer of the chili mixture.
6. Place a few slices of jalapeños on top of the chili mixture.
7. Sprinkle with vegan cheese and crushed tortilla chips.
8. Bake for 20-25 minutes.
9. Top with coriander and enjoy.
