Fancy a fry up this weekend? Warm up your morning with this healthier alternative: a lean Full English breakfast wrap made with @clarence_court eggs, which is just as delicious 😍. Featuring spinach, homemade baked beans, grilled bacon and sausage. All served in an egg wrap made with Clarence Court Burford Brown eggs, which have gorgeous golden yolks! 🐔 I recommend preparing the beans in advance - you can store them in the fridge for up to 3 days.
🍅 Heat a large frying pan on a medium heat and add a drizzle of oil.
🍅 Add a finely chopped onion and soften until translucent then add a crushed clove of garlic and cook for a further minute.
🍅 Add a tin of chopped tomatoes with 1 tsp each of cumin, smoked paprika, cinnamon and brown sugar, then simmer for 20 minutes.
🍅 Add a tin of beans of your choice (haricot work well, but I used butter beans for a chunkier texture), turn the heat down to the lowest setting and gently cook for 30 minutes.
🍅 Serve straight away or put to one side and allow to cool completely before storing in the fridge.
Full English wrap:
🥚 To make the egg wrap firstly heat a medium non-stick frying pan on a low heat with a drizzle of oil.
🥚 Whisk 2 Clarence Court Burford Brown eggs in a bowl with a drop of milk and pinch of sea salt then tip into the pan.
🥚 Cook the eggs for a couple of minutes then carefully flip on to the other side, as if you were cooking an omelette. Cook for a further minute then carefully transfer the wrap to a plate.
🥚 Top the wrap with baby spinach leaves, the homemade beans (warm first if you have prepared them in advance), grilled bacon and sausage, then bring each side up to form the wrap.
